Tabouleh

Ingredients
  • 2 bunches curly parsley
  • 1 bunch mint leaves
  • 5 scallions
  • 3 medium tomatoes
  • Red Onion - ½ small, finely chopped
  • 1/2 English cucumber cubes small
  • 2 lemons, juiced
  • 1/4 cup olive oil
  • 1 pinch salt and pepper, plus more to taste
  1. Wash and dry the parsley and mint. Remove the stems, finely chop the herbs together, and put them in a large mixing bowl.
  2. Peel and deseed the cucumber half. Slice it lengthwise into thirds, then chop. Chop onion and tomato and it them to the cucumber, parsley, and mint.
  3. Add lemon juice, olive oil, salt, and pepper. Mix well, taste, and adjust seasoning and olive oil as needed.

Jeannies cracked salad


Crack salad 
Ingredients:
Shredded cabbage or coleslaw. 
Cilantro. 
Squeeze lemon or lime in while prepping everything else.
cucumbers
sesame seeds
oil

Dressing is the Viet fish sauce (311 & 1/4)
When I make it I just use a quarter cup ... so 3/4 of water
1/4 sugar
1/4 fish sauce
Garlic
Chili sauce
Boil water and dissolve sugar turn off heat then add fish sauce then add garlic and chili sauce.

For protein there's usually chicken or shrimp boiled. And peanuts for crunch

Then top off with clear seaweed noodles soak in vineager water
