Spinach chicken pasta
Ingredients
6 garlic cloves, minced1/4 teaspoon red pepper flakes (this doesn’t add spiciness – just the right amount of flavor)
4 tablespoons olive oil
2 boneless, skinless chicken breasts (about 1 pound)
Salt and pepper to taste
.5 pound penne pasta
1 (5-ounce) bag baby spinach
1/2 cup chopped fresh basil or 1 tablespoon dried
6 tablespoons juice from 2 lemons
1 cup grated parmesan cheese
Instructions
Bring 4 quarts water to a boil in a large pot. Meanwhile, combine garlic, pepper flakes and oil in a small microwave-safe bowl and microwave until garlic is golden and fragrant, about 1 minute.Pat chicken dry with paper towels and cut into bite-size pieces. Season with salt and pepper. Transfer 1 tablespoon of the garlic/red pepper oil to a large skillet and heat over medium heat until oil is rippling. Add chicken and cook until well browned and cooked through. Transfer to a plate and tent with foil.
Add 1 tablespoon salt and the pasta to boiling water and cook until tender but still slightly firm (al dente). Reserve 1/2 cup cooking water. Drain pasta and return to the pot. Stir in chicken, spinach, basil, lemon juice, Parmesan, and remaining garlic mixture, adding reserved pasta water as needed. Season with salt and pepper. Serve immediately.
Banana Bread(vegetable Juice)
Ingredients
Butter, for greasing the loaf pan1 1/2 cups all-purpose flour, plus extra for dusting the loaf pan
1 teaspoon baking soda
1 teaspoon fine salt
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup sugar
1/2 cup vegetable oil
2 large eggs, beaten
1 teaspoons vanilla extract
2 ripe bananas, peeled and coarsely mashed to yield about 3/4 cup of mashed banana
1 cup (about 4 ounces) fresh blueberries[1/2 cup vegetable juice(carrot, kale, spinach, apple)]
Instructions
Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter and flour a 9- by 5- by 3-inch loaf pan. Set aside.In a medium bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon and nutmeg. In a large bowl, beat the sugar, oil, eggs and vanilla until blended. Stir in the bananas and blueberries(vegetable juice). Add the dry ingredients and stir just until blended.
Pour the batter into the prepared loaf pan. Bake until a cake tester inserted in the center of the loaf comes out clean, about 1 hour. Cool for 15 minutes. Remove the loaf from the pan and cool completely on a wire rack, about 2 hours.

pour it onto muffin tins then bake for 30-40 mins...

Baked Turkey Meatball
Ingredients
any type of oil(I used coconut oil for health reasons)1 package of Ground Turkey(1.25lb)
1 egg
1 cup of bread crumbs
1/4 cup of onion
2 garlic cloves, minced
1/4 cup parseley
1/2 cup parmesan cheese
1 teaspoon salt
1/2 teaspoon pepper
Instructions
Preheat oven to 350 F.In large bowl, mix turkey, onion, garlic, egg, breadcrumbs, parsley, cheese, salt and pepper. Shape mixture into 1 ¼-inch diameter meatballs. Bake for 30 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer. Just add bbq sauce or any type of sauce you like to go with it.
